Caviar de Riofrio
Caviar de Riofrio Caviar de Riofrio originates from the Acipenser Naccarii species, one well known for its high quality. We are the only breeders in Spain which cultivate the Sturgeon known as the Sturgeon from Guadalquivir, a species recently recuperated from extinction.
Guaranteed fresh caviar, and guaranteed exceptional quality. On the palate, it leaves a rich, silky, crunchy taste, followed by an unforgettable finish.

It has been classified as one of the finest quality caviars in the world due to its freshness. We have full CITES certification, (“Convention on International Trade in Endangered Species of Wild Flora and Fauna” www.cites.org) which is run by the UN and regulates everything such as the breeding, production and sales of Sturgeon and Caviar due to it being an animal threatened with extinction.

Similar to all caviar of high quality, Caviar de Riofrio is prepared “mallosol” style or “with little salt”, never surpassing 3% - 4%. Furthermore we guarantee 100% that all our caviar is from the same species.

At Caviar de Riofrio we prepare caviar in three different ways:

o Fresh Organic Caviar: Caviar and salt. The only organic caviar available in the world with no preservatives whatsoever. It has all the relevant organic certification from the breeding of the animal to the way it prepared.

o Fresh Conventional caviar: Caviar, salt & preservatives. Fresh conventional caviar is prepared for those who prefer fresh caviar with preservatives. Stronger than organic caviar, but lighter than the mature caviar, fresh conventional caviar is recommended something in between.

o Mature Caviar or Russian-Iranian style: Mature caviar is prepared for those who prefer the traditional stronger caviar taste. Matured for between 3-4 months this caviar is prepared in the same way that caviar is prepared in Russia or Iran.





Within these three types you can choose from the following qualities:

- “Classic”: This is our long established caviar. Its freshness makes it unmistakeable, and its silky, velvety taste on the palate make it an authentic jewel for caviar experts, and chefs alike.

- “Excelsius”: The finest selection. With a superior size egg, guaranteed freshness and an unbelievable colour, Excelsius is a rare and appreciated luxury.

- “Unico”: No comment. Pure extravagance. Please confirm availability.

- “Same day caviar”: What does fresh caviar actually taste like? It probably brings back good memories of what caviar used to be like, when you were able to taste the freshness. The highest grade caviar is obtained on the same day of extraction. It is extracted and sent on the same day under strict terms and conditions. Its shelf life is 5 days due to its extreme freshness and is only available in 200gr, 500gr and 1kgs. Please confirm availability.

To extract the caviar no system is used that would harm or hurt the animal in any way. The female sturgeon has to be a minimum of 18 years of age before the caviar can be extracted.
Years of waiting, looking after and spoiling the animal result in what experts consider to be one of the finest caviars in the world.
