STURGEON FROM RIOFRIO - “Acipenser Naccarii” PSN has the largest population in the world of the Acipenser Naccarii species, which is well known for its high quality meat and of course its caviar.
The “Sturgeon from Guadalquivir”, as it is known in Spain, is a gastronomical luxury that is being used by some of the most famous chefs and experts all over the world, from the Dean & Deluca in Tokyo to Fortnum & Masons in London.

The “Acipenser Naccarii” is white meat, without bones, and is extremely high in polyunsaturated fats and Omega 3 and 6.

The minimum weight for the sturgeon to be sold as meat is 9 kilos (between approximately 8 and 10 years of age), however this particular species can reach over 100kgs in weight.
The Sturgeons and Caviar from Riofrio have three basic elements that are essential for its high quality:

• FOOD
o Low in fat
o Organic – Certified organic food
o Healthy – 50% Flour and fish oil, and 50% of our own elaboration: crill, saline, seaweed….which are all grown in our very own tanks.

• RACE “Acipenser Naccarii”
o Sturgeon from Guadalquivir:
o Prehistoric Fish: Approx. 250 million years old

• BREEDING & ENVIRONMENT
o Duration of breeding: Identical to that in the wild
o Type of tanks/pools: They are identical to that of a riverbed, natural drainage system, seaweed, moss….
o Quality of the water: this is essential for the sturgeons breeding and the quality of the caviar.
